Feijoada Recipe (Beans and Rice)

Feijoada neozelandesa da Christiane

Ingredientes
  • 2 kg de feijão preto (black turtle beans – Bin Inn or Indian Supermarket in Durham St)
  • 3 folhas de louro (bay leaves)
  • 1 a 3 pimentas malagueta (a gosto) (small chilli peppers)
  • 1.6 kg de costela de porco defumada (frozen smoked bacon bones - Mad Butcher )
  • 6 dentes grandes de alho amassados ou picados (garlic cloves)
  • Sal (a gosto)
  • Pimenta do reino (a gosto) (black pepper)
Preparo
  1. Coloque o feijão na água fria durante a noite com as folhas de louro e a malagueta.

    No dia seguinte:
  2. Coloque as carnes no feijão e cozinhe até ferver.
  3. Separadamente frite o alho amassado com o sal e a pimenta preta até o alho começar a ficar louro.
  4. Adicione o alho frito ao feijão e misture. Prove de sal.
  5. Cozinhe em fogo baixo durante 3 a 5 horas até o caldo ficar grosso. Se o feijão for novo ve umas  3 horas, se for velho, levará mais tempo para engrossar o caldo.
  6. Mexa a feijoada mais ou menos a cada 30 minutos e não deixe secar. Adicione água se necessário.
  7. Quando o feijão ficar macio e o caldo tiver engrossado, retire e desosse as carnes.
  8. Despreze os ossos e coloque as carnes no feijão. Pronto!
